Tomato Panzanella

Ingredients
- 3 C crusty peasant style bread, 1-inch cubes
- 1/2 lb tomatoes, wedges
- 1/2 C sliced, cucumber
- 1/4 C red onion, sliced
- 1/4 C olive oil
- 1 T Balsamic vinegar
- 5 ea fresh basil leaves, shredded
Instructions
- Whisk together the oilve oil and vinegar, then season to taste.
- Toss the bread, tomatoes, cucumber onion, and basil in the dressing.
- Plate and serve.
